A Local Challenge Breakfast

During the Eat Local Challenge, there have been ups and downs.  Breakfast has been hard for me.  I love eggs… until I’ve eaten them more than twice in a week. Suddenly their pretty brown shells fill me with utter revulsion, and the thought of a once enjoyable scrambler is as appealing as eating slimy mushrooms. Yikes.  Since I haven’t found any local oats yet, oatmeal is out of the picture, and I don’t really feel satisfied after toast… What’s a gal to do?

Today I went with a fruity breakfast and it was DELIGHTFUL. I sliced the pears last night before bed, arranged them in the pan and plopped raspberries on early this morning. Throwing the whole thing in the oven I crawled back under the covers until the timer went off. The result? Delicious, 100% local pear and raspberry bake.  No additional sugars or seasoning necessary – it was perfect all on its own. And warm, which feels comforting and right on these mornings where thick fuzzy robes are suddenly necessary.

Any breakfast tips/tricks from you?  Once I get flour, pancakes and muffins, here I come!

    If you find a nice hearty toast + fruity spread + locally made cream cheese (Arena cheese for example), it can make a beautiful, and filling, breakfast. I save the fruit for snack.
